Smoked Paprika Pimentón de la Vera

José selected the sweet and smoky ‘agridulce’ Jariza peppers, which have an intense flavour and medium heat. The peppers, grown in the La Vera region of Extramural, are handpicked and then slowly dried over oak for fifteen days. This gives the pimentón its distinctive flavour and preserves the peppers' flavour, for a truly intense smoked paprika.
